This mouth watering creamy chicken dish, is overflowing with delicious flavours, sun dried tomato, wine, mustard and basil. It's so easy to make and perfect to have cooking in the slow cooker ready for dinner at the end of the day.
Serves 3-4 People
Ingredients:
500-750 g Chicken Mini Fillets
2 Tbsp of Plain Flour
2 tbsp olive oil
190 ml Chicken stock (we used 1 stock cube)
125 ml White Wine
3 Tbsp Gia Sun dried Tomato Puree
1 Tsp Gia Garlic Puree
Black pepper to taste
2 Tbsp Dijon Mustard
200 ml Double Cream
Handful of chopped Basil
Slow Cooker Method:
1: Place the flour and pepper in a bowl and fully coat the chicken fillets all over.
2: Heat olive oil in a pan, brown the chicken for 2 mins on each side. Transfer to the slow cooker.
3: Add the Gia Sun dried Tomato Puree, Gia Garlic Puree, chicken stock,white wine, Dijon mustard, pepper , basil and give a good stir. DO NOT ADD CREAM YET.
4: Cook on LOW setting of slow cooker/ Low (98°) on Slow cooking function of pressure cooker for 4 hours.
5: Add the double cream 20 mins before serving and stir in to the slow cooker and wait for it to slowly warm through.
Serve with rice and Enjoy!!
Pressure Cooker - Slow Cook Method:
1: Place the flour and pepper in a bowl and fully coat the chicken fillets all over.
2: On Fry/Brown method heat olive oil in Pressure Cooker Pan, brown the chicken for 2 mins on each side.
3: Select Slow cooking Function Low (98°). Add the Gia Sun dried Tomato Puree, Gia Garlic Puree, chicken stock,white wine, Dijon mustard, pepper , basil and give a good stir. DO NOT ADD CREAM YET.
4: Add the double cream 20 mins before serving and stir in to the slow cooker and wait for it to slowly warm through.
Pan Method:
1: Place the flour and pepper in a bowl and fully coat the chicken fillets all over.
2: Heat olive oil in a pan, brown the chicken for 2 mins on each side.
3: Add the Gia Sun dried Tomato Puree, Gia Garlic Puree, chicken stock,white wine, Dijon mustard, pepper , basil and give a good stir. DO NOT ADD CREAM YET.
4: Cook on a low simmer for 20 mins with lid on.
5: Add the double cream 15 mins before serving stirring whilst warming through.
