EASY TASTY PUTTANESCA
1 slug or 10 tbsp extra virgin olive oil
600g cherry tomatoes halved lengthways
2 fresh red chilli seeded and finely chopped or 1/2 tsp chilli flakes
4 cloves of garlic thinly sliced
2 tbsp capers drained
1 tbs of chopped black olives, Kalamata or Taggiasca
1 good squeeze of TASTE #5 UMAMI PASTE™
1 handful of basil leaves
ground black pepper & salt flakes to taste
Heat oil as above. Sautee garlic and chilli until garlic begins to colour. Add all other ingredients and stir. Add torn basil and season with black pepper. Note that TASTE #5 UMAMI PASTE™ is very savoury so taste before you add salt. Allow to gently simmer on a low heat for about 10 – 15 minutes or until tomatoes begin to break down. Note that if the tomatoes are too acidic you can balance with a pinch of sugar.
If you like, you can add a squeeze of lemon and some grated zest for some extra zing.
Note: Crumbled feta cheese added at the last minute gives a delicious salty kick.
